About Chef Steven Klingler:

The Cedars at Dungeness is pleased to announce the hiring of Mr. Steven Klinger as lead banquet & catering chef.  Steven brings with him a wealth of knowledge and a passion for creating bold flavors that express his love for food. He started in the business over 20 years ago and has been a line cook for the last 15. Steven loves challenging himself to learn new techniques to bring the best product to our customers.

You can look forward to a refreshed banquet and catering menu, featuring our favorites and some exciting new additions that are sure to impress. Whether you’re an annual group or booking for the first time, there will be plenty to look forward to. We could not be more excited to have Steven as a big part of our team. We look forward to serving you for all your banquet and catering needs.

 

 

The Menu

Salad Course: Foccaprese

Homemade herbed focaccia bread topped with an a balsamic, heirloom tomato, avocado and basil mix accompanied by burrata cheese and pesto oil.

 

2nd Course: Irish Wedding Soup

Delicious lamb and pork meatballs in a stout beer and beef stew with mirepoix, kale, potatoes and orzo pasta topped with fresh cabbage.

 

3rd Course: Brisket Gnocchi Mac and Cheese

Creamy Smoked cheddar and gouda gnocchi mac and cheese topped with tender smoked brisket and homemade BBQ sauce drizzle and crispy red onion straws.

 

Main course: Chicken Roulade

A Fried Panko Chicken breast stuffed with sundried tom, spinach and feta on a bed of roasted red pepper cream sauce served with broccolini and garlic whipped potatoes

 

Dessert: Panna Cotta

A fruit filled vanilla and poppyseed panna cotta, topped with mango and passionfruit gelatin served with a matcha green tea ice cream.
